Matthew brings decades of wine knowledge to your table with every bottle he matches, sharing his insights into flavours, textures, regions and wineries.

He began his career as a buyer for Michelin starred Bibendum restaurant where he remained for almost thirty years, winning awards for his list. He then became an award-winning wine writer where during recent years, he has written for national newspaper columns and magazines, and releases annual reports sharing tasting notes on thousands of Old and New World wines.

His pairings are truly exceptional.



Charlotte is a certified sommelier who started her career in hospitality at the iconic Michelin starred restaurant The River Cafe, London. Her experience there ignited her passion for wine and she then went on to realise this more fully at the Michelin Guide listed restaurant Lorne.

She was part of the launch team at Michelin starred Elystan Street as Head Sommelier which saw the restaurant win their star within their first year of opening. She is now at Kitchen W8 where she curates the wine list for Mark Kempson’s Michelin starred seasonal menus.

Charlotte’s knowledge of wine and love for food make her pairings both inspired and wholly delicious.
