Daniel Fletcher unleashes a 3-course menu with only one season in mind: spring. Rump of spring lamb from Dorset is the classic centrepiece of this feast, but harmonious culinary balance sits on either side. Beetroots roasted in garlic and rosemary are the core of a salad that is as light as it is piquant and nourishing. 

And then to the lamb; pan-fried and basted, then roasted with garlic and rosemary, it awaits the classic sautee of bacon, fresh broad beans & peas. Baby gem, spring onions, mustard and creme fraiche are added a-la-minute to this vibrant broth, that the rested and carved lamb shall abide upon. 

Golden raisins soused and softened in orange juice will bless a classic creme caramel. The unctuous baked custard, lets smoky caramel seep over its summit, soothing and gratifying with every elegant spoonful.

Sampling. Arguably a musical phenomenon that’s been around since composers first put quill to parchment. The practise was popularised through musical “quotations”, amongst flurries of virtuosity, in dark jazz clubs and truly solidified through the stratospheric rise of turntable-based hip hop starting around the 80s. Depending on who you ask it’s either a glorious revolution that’s helped shaped our ideas of what modern music truly is - or literal theft.

Regardless of opinion the way sampling has influenced the music of today is utterly undeniable. Listen to the first track in this playlist for evidence of that: if it sounds familiar you may have heard one of the 5000+ tracks that have sampled it’s famous drum break.
