Multi-award winning plant-based chef Chantelle Nicholson proves here that creativity and imagination are not sacrificed in plant-based cuisine. This is a generous, multi-layered and complexly flavoured dish. At its base we have a chickpea pancake infused with coconut cream. British asparagus is sauteed in sesame oil with samphire for natural salinity. Jersey royal potatoes provide their unique and seasonal, buttery sweetness. Expect to be making a deliciously light and moreish plant-forward aioliwith garlic and red miso. Freshness and heat come in the form of an invigorating green chilli salsa, which is full of mint and coriander. Watercress provides a palette cleansing, peppery finish to this clever and robust plate.
