This month Daniel Fletcher brings classic cooking to the fore. There are no smoke or mirrors in this dish, just quality, seasonality and flavour. Sweet and succulent fillet of Cornish Hake, complements fresh, unctuous and creamy borlotti, slow-braised with smoked bacon, shallots & garlic. A homemade basil butter adds a rich herbal infusion, and a medley of wild sea vegetables; sea beets, sea purslane & salty fingers, are introduced at the end for a fragrant saline kick and textural bite. Swiss chard provides a welcome bittersweet counterpoint to this ambrosial dish.
A warm evening, good company, and a crisp white wine are the only finishing touches you’ll need.
