This month Mark Kempson delivers summer on a plate. Ideal for al fresco dining, this banquet is designed for picking and sharing. Smoked paprika is the dominant spice here; rubbed into a generous cut of pork ribeye, and whisked into an aromatic aioli. Pickled red onions will yield a refreshing sweetness, as grilled Ramiro peppers, courgettes and pink fir potatoes unleash charred, savoury nourishment.
A light salad of Datterini tomatoes, shallots, mustard vinaigrette, & roasted purple garlic is both cleansing and aromatic. Grill pan or barbecue, the succulent brined pork will crown this feast with rich caramelisation and smoky unctuousness.
