Heritage carrots roasted in maple syrup and thyme rub up against peaches pickled in ginger and tarragon.
You’ll make a rich and decadent pearl barley risotto with a yeast-based stock that will absorb a cashew nut cream with dill and chives. A sleek carrot puree will be anointed with toasted cumin oil. These elements come together on your plate in a harmonious burst of colour and flavourful communion.
This is a plate with many layers, and it will be a culinary pleasure to dig through them.
