Ras el hanout spiced cauliflower steals the show here, and why wouldn’t it when it is handpicked for its densely packed florets and tender stalk. Grown in Lincolnshire where the soil is rich with high mineral content, resulting in all-round brilliant brassicas. Whiting is beautifully flaky with a delicate flavour which is why it’s a mystery that this very sustainable fish is completely underused.
We line the plate with brussel tops and then adorn with roasted cauliflower and a raw cauliflower salad. Yes, it’s tender enough to eat raw! Nectar sweet and sun-ripened golden raisins, also known as Pasas de Málaga, are DOP protected raisins created by drying ripe Moscatel de Málaga grapes grown in Axarquía near Málaga are the base of this golden raisin dressing which is moreish and delicious. This matched with the cooling tang of garlic buttermilk and you’ve got yourself the perfect dish to spice up the mid-winter.
Award-winning wine expert Matthew Jukes has paired this with a 2019 Gavi di Gavi from Piemonte, Italy. The fragrant cauliflower, subtle garlic and the gentle caramelisation of the fish serve to augment the talents of this wine as opposed to giving it hurdles to try to overcome. This subtle, elegant meal has found an equally composed white wine and the results are nothing short of beautiful both on the nose and palate.
